Question:

When a recipe calls for soaked nuts (as in the Cashew Cream recipe), are we supposed to measure the nuts before or after they are soaked? The volume changes a lot.

Answer:

You know, generally speaking, uh, you need to look at the wording, uh, in the recipe, uh, and, and try to understand what the author intended when she or he wrote the recipe. Okay? But, uh, you know, I will say that, um, generally speaking, my experience, the measurement that's given is gonna be your dry measurement. Uh, and then you'll take that, uh, let's say one cup of cashews, and then you'll soak it and they expand to, to some larger volume. But you'll just continue with, uh, the recipe at that point. Um, and, uh, you know, the, the, the good thing with, uh, you know, cooking generally is that you can make adjustments along the way. So if it turns out that you thought the recipe meant this, um, but it seems to actually mean this, and, and the volumes turn out different, you know, and, and therefore the the finished product has a flavor that's a little bit thin or a little bit strong, uh, then, you know, you can make notations on the recipe because you understand it better at that point, um, and then move forward, you know, by, um, by customizing, uh, you know, the details of the preparation. But, uh, again, it depends on how the recipe's written based upon what the author intended. But generally, you're gonna, you know, you're gonna measure the, the nuts, and then you're gonna go, uh, soak them.
